What you need

240g Flour (for muffins), 40g Flour (for creme) and 8g Yeast

80 g Sugar (for muffins) and 100g Sugar (for creme)

100ml milk (for muffins) and 200ml milk (for creme)

100g Olive Oil or Sunflower Oil and 5g salt

2 eggs (for muffins) 2 eggs yolk (for creme) and 5g turmeric

1 lemon (for muffins) 1 lemon (for creme)

Let's make it

Step 1

In a bowl add flour, sugar, salt and yeast.Then mix all the ingredients together. In another bowl add the liquid ingredients: milk, lemon juice and sunflower oil and stirr .

Step 2

Add the liquid ingredients to the dry, then add the two eggs and stirr.

Step 3

Pre-heat the oven to 180°C. In a muffin pan, add the fairy cake cases, and with a spoon fill the cupcake liners to about 3/4 and bake for 20 minutes.

Step 4

To make the cream, in a pan add the 200ml of milk and the turmeric. Allow to heat for 2-3 minutes

Step 5

While the milk is getting warm, in a bowl mix 100g of sugar and the two egg yolks. Add two spoons of milk to make the ingredients easier to stirr.

Step 6

Add the 40g of Flour and mix all the ingredients.

Step 7

Add the ingredients to the milk, stirr repeatedly with a wire whisk while cooking on low flame. and then cook on a very low flame. Add the lemon juice and stirr once more.

Step 8

When the creme and muffins are ready you can move to the next step.

Step 9

Add the creme in a piping bag to make it easier to decorate the muffins with it.

Step 10

Finally, it's time for decorations! Use chocolate chips for the eyes, cut small slices mango for the legs and beaks of our chicks. Enjoy the Lemon chickpea muffins!
